Lemon Cookies
( recipe from Mrs Reverend J.J. Klassen )
This is a large recipe.
2 cups white granulated sugar
2 cups heavy cream
1 cup milk
1/2 cup lard ( use margarine or shortening if you like )
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons lemon extract
flour
Mix all the ingredients ( except flour ) together well with electric mixer. Add enough flour ( add 1 cup of flour at a time ) to make a soft dough that you can roll out. Set dough on counter to rest for 2 hours. Roll out, using flour generously on counter to prevent dough from sticking to counter. Cut with cookie cutter. Bake cookies on greased cookie sheet at 350F for 8 minutes or until done. Cool and ice with lemon icing.
( Lemon Icing - Melt 2 tablespoons of margarine in saucepan. Add 3 tablespoons of cream. Remove from heat. Add 1 teaspoon lemon extract. Thicken with icing sugar to spreading consistancy. Spread on cooled cookies.)
