Brownie Bites

I found this recipe in our local newspaper - The Manitoba Cooperator.

Caption - Who can resist brownies? Baked in mini muffin tins these are as cute as they are delicious.

Recipe
1/3 cup cocoa powder
1/2 cup whole wheat flour
1/2 cup all purpose flour
1/4 cup chopped walnuts
1 teaspoon baking powder
3 tablespoons canola oil
1 teaspoon vanilla
3/4 cup brown sugar
1/2 cup white sugar
2 egg whites
1/2 cup unsweetened applesauce

Preheat oven to 350F. Lighty spray canola oil cooking spray on non stick mini-muffing pans.
In medium bowl, whisk together cocoa powder, flours, walnuts and baking powder.
In a second bowl, beat together the canola oil, vanilla, sugars, egg whites and applesauce. Add flour mixture and walnuts into wet ingredients and stir just to combine ingredients. Place batter in prepared muffin pans. Bake for 15 minutes or until toothpick comes out clean. Remove from pans and let cool on wire rack.
