Chicken Stew ( Slow Cooker Style )

Slow Cooker Chicken Stew  ( I got this recipe from our local Coop grocery flyer )

Slow Cooker Chicken Stew
2 Tablespoons canola oil
2 lbs boneless chicken, cut into bite size chunks
1 medium onion, diced
2 celery stalks, diced
2 cups sweet potatoes, diced
1 cup baby carrots
2 cloves garlic, chopped
8 ounces mushrooms, sliced
1/2 cup flour
1 carton ( 900 ml ) Campbells Ready to use Chicken broth
1 can cream of celery soup
1 teaspoon dried rosemary
2 bay leaves
1/2 cup whipping cream

In large skillet, heat oil and brown the chicken until tender. Transfer chicken to slow cooker. In same skillet pan, add onions, celery, sweet potatoes, carrots and cook for 4-5 minutes. Add garlic and cook 1 minute. add mushrooms and flour and cook 3-4 minutes, stirring to combine. Transfer to slow cooker. Add remaining ingredients ( that is chicken broth, celery soup, rosemary, bay leaves ) except cream to slow cooker. Stir and cover and cook on low for 7-9 hours. ( Depending on your slow cooker it could be as little as 5 hours. )
Just prior to serving, add cream to slow cooker and cook on high for 10 minutes. Stir to combine. Remove bay leaves and serve.
