Place 6-8 pieces of chicken breast or chicken legs in roaster pan. Add 1/2 cup of water. Cover with lid and bake in 400 F oven for 30 minutes. While chicken is baking prepare the sweet and sour sauce.
Sweet and Sour Sauce
1 cup brown sugar
3/4 cup white vinegar
1 cup boiling water
1/4 cup ketchup
2 tablespoons soya sauce
Place the above ingredients into saucepan. Combine and bring to a boil. Now mix 2 tablespoons cornstarch with 1/2 cold water. Slowly add to the sweet and sour liquid and continue to boil gently and stirring for 3 minutes.
Pour sauce over the chicken in roaster pan and continue to bake in oven reducing oven temperature to 350F. Continue to bake till tender - about 55 minutes.
Serve with hot boiled rice. Enjoy!
