Potato Salad - great for family gatherings!

10 medium/large potatoes, boiled and cooled
10 hard boiled eggs, cooled
green onions, finely chopped
2 cups mayonaise
1 cup cream
1/3 cup vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons prepared mustard
1/3 cup sugar

Dice the potatoes and the eggs. Place in large bowl. Add the chopped onion. Gently fold together a bit.
In separate bowl combine remaining ingredients to make the salad dressing - mayonaise, cream, vinegar, salt, pepper, mustard and sugar. Stir together well. Now add to the potato and egg mixture. Stir and fold in gently to mix. Keep salad cool in refrigerator till serving time.

Potato Salad - my Mom's recipe

5 hard boiled eggs  ( cooled completely to cold temperature )
4 cups potato, cooked and cooled completely
1 small onion with greens
Potato salad dressing ( recipe below )

Place grated cold potato in salad bowl. Add grated cold hard boiled eggs. Finely chop onion and add to potato mixture. Add enough salad dressing to nicely moisten. Stir together with fork. Keep cool in fridge till serving time.

Salad Dressing
1/4 cup granulated sugar
1/8 teaspoon dry mustard
1/2 teaspoon salt
pepper to taste
3/4 cup heavy cream
5 tablespoons vinegar
Mix together well. Use for potato salad.
