A Christmas favorite...
1 cup butter, softened
1/2 cup icing sugar
1 teaspoon vanilla
2 and 1/4 cups flour
Cream together the butter, icing sugar and vanilla. Add flour. Mix well and set on counter to rest at least 30 minutes. Shape into 1" balls. Dip the balls of dough in white or colored sugar. Place on ungreased baking sheet. Press down with fork. Bake at 375 F for 8 - 12 minutes until lightly golden. Cool. Makes 4 dozen cookies.
