Oatmeal Cake

1 cup rolled oats
1 and 1/4 cups boiling water
1 cup white sugar
1 cup packed brown sugar
1/2 cup margarine or butter
2 eggs
1 and 1/3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon vanilla
1/2 cup chopped walnuts ( optional )

Stir oats into boiling water. Remove from heat, cover and set aside for 20 minutes.
In large mixing bowl cream margarine, white sugar and brown sugar. Beat in eggs and vanilla. Add oatmeal mixture, flour, baking soda, salt and cinnamon. Stir together real well. Add walnuts.
Spread into large greased cookie sheet. Bake at 325F for about 30 - 40 minutes until done. Spread with Coconut Topping and return to oven until the coconut topping bubbles. Don't let it get too brown. Remove from oven. Cool and enjoy!

Coconut Topping
1/3 cup margarine or butter, melted
1 cup brown sugar
1/4 cup cream
1 and 1/2 cup coconut
1/2 teaspoon vanilla
Stir together and spread on cake as directed in recipe above.
