Pumpkin Pie ( my favorite )

My Pumpkin Pie

Pumpkin Pie
( this is the recipe I most often use when making Pumpkin Pie )

1 cup white granulated sugar
2 tablespoons flour
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
2 eggs, beaten
2 cups pumpkin (cooked and mashed  or you can buy canned )
1 cup milk

Stir together the sugar, flour, spices and salt in a large mixing bowl. Now add the eggs and milk and beat well. Add the pumpkin, and stir together well or mix gently using electric mixer on lower speed. Pour into unbaked pie shells ( 2 small ) or use unbaked tart shells if desired. Bake pies at 400F for 10 minute, then reduce heat to 325F and continue to bake until done - approximately 20 - 25 minutes.
Cool completely. Then top with your favorite whipped topping such as whipped cream or cool whip. I use nutriwhip. Enjoy!
