Coconut Cream Pie

1 baked 9" pie crust

1 cup white sugar
1/4 teaspoon salt
1/2 cup flour
2 and 1/2 cups milk
3 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla
1/2 cup coconut

Mix flour, sugar, and salt in top of double boiler. Stir in milk and cook over hot water in double boiler, stirring constantly till thick. Add egg yolks, mixing in quickly. Cook an additional 3 minutes. Now add butter and vanilla and coconut. Pour into baked 9" pie crust. Top with your favorite whipped topping.

Note - you can also cook this pie filling in a non-stick saucepan if you do not have a double boiler. Just be sure to stir constantly.
