Chocolatey Banana Muffins

2/3 cup canola oil
1 cup packed brown sugar
2 eggs
3 medium sized ripe bananas, mash with fork
1 teaspoon vanilla
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 and 1/2 cups chocolate chips

Preheat oven to 325F. In mixing bowl, combine oil, brown sugar, eggs and  vanilla. Beat well with electric mixer. Stir in mashed banana. Combine flour, baking soda and salt in separate bowl and add to sugar/oil mixture. Add the chocolate chips and stir with wooden spoon to mix. Spoon into greased muffin tins. Bake in preheated oven for 15- 20 minutes until done. Makes 24 muffins.
